Ingredients:  

Main Ingredients

  • 500 g Green beans trimmed
  • 2 medium Potatoes peeled and cubed
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 400 g Tomatoes diced
  • 60 ml Olive oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 cup Water

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until softened.
  • Add the minced garlic and cook for another minute.
  • Add the green beans, potatoes, and diced tomatoes to the pot.
  • Pour in the water, add salt and pepper, and stir well.
  • Bring to a boil, then reduce heat and simmer for 45 minutes, or until vegetables are tender.
  • Adjust seasoning if necessary and serve hot.

Notes:

This stew is even better the next day!
