Ingredients:  

Stew

  • 2 lbs Chicken thighs bone-in, skinless
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 2 cups Chicken broth
  • 1 can Coconut milk 13.5 oz
  • 2 tbsp Curry powder
  • 1 tsp Thyme dried
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 1 tsp Salt or to taste
  • 1 tsp Black pepper or to taste

Dumplings

  • 1 cup All-purpose flour
  • 1 tsp Baking powder
  • 1/2 tsp Salt
  • 1/2 cup Water

Instructions: 

  • 1. In a large pot, heat some oil over medium heat. Add the chicken thighs and brown on all sides. Remove and set aside.
  • 2. In the same pot, add the chopped onion and minced garlic. Sauté until fragrant.
  • 3. Add the curry powder and thyme, cooking for another minute.
  • 4. Pour in the chicken broth and coconut milk. Stir to combine.
  • 5. Return the chicken to the pot. Add the carrots, potatoes, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • 6. While the stew is simmering, prepare the dumplings. In a mixing bowl, combine the flour, baking powder, and salt. Gradually add water and mix until a dough forms.
  • 7. Form the dough into small balls and drop them into the simmering stew. Cook for another 15 minutes or until the dumplings are cooked through.
  • 8. Serve hot and enjoy!
