Ingredients:  

Main Ingredients

  • 2 lbs Beef chuck, cut into chunks
  • 2 tbsp Olive oil
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Beef broth
  • 2 cups Carrots, sliced
  • 2 cups Potatoes, diced
  • 1 cup Peas
  • 2 tbsp Tomato paste
  • 1 tsp Dried thyme
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat. Add beef chunks and brown on all sides.
  • 2. Add chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  • 3. Stir in tomato paste, dried thyme, salt, and black pepper. Cook for another minute.
  • 4. Pour in beef broth and bring to a boil. Reduce heat to low, cover, and simmer for 1 hour.
  • 5. Add carrots and potatoes to the pot. Simmer for another 30 minutes or until vegetables are tender.
  • 6. Stir in peas and cook for an additional 5 minutes. Adjust seasoning if needed.
  • 7. Serve hot and enjoy!

Notes:

Feel free to add other vegetables like celery or mushrooms if you like.
