Ingredients:  

Main Ingredients

  • 2 pieces Yam peeled and cut into chunks
  • 1 bunch Kontomire (cocoyam leaves) washed and chopped
  • 2 cups Tomato Sauce
  • 1 cup Palm Oil
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 piece Ginger grated
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste

Instructions: 

  • 1. Heat the palm oil in a pot over medium heat.
  • 2. Add the chopped onions, garlic, and ginger. Sauté until fragrant.
  • 3. Stir in the tomato sauce and cook for about 10 minutes.
  • 4. Add the yam chunks and enough water to cover them. Bring to a boil.
  • 5. Reduce the heat and let it simmer until the yam is tender.
  • 6. Add the chopped kontomire and cook for another 10 minutes.
  • 7. Season with salt and pepper to taste. Serve hot.

Notes:

Feel free to add smoked fish or meat for extra flavor.
