Ingredients:  

Main Ingredients

  • 1 lb Beef Stew Meat
  • 2 cups Diced Potatoes
  • 1 cup Chopped Carrots
  • 1 cup Chopped Celery
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Beef Broth
  • 1 can Diced Tomatoes
  • 1 tsp Dried Thyme
  • 1 tsp Dried Rosemary
  • to taste Salt and Pepper

Instructions: 

  • 1. In a large pot, brown the beef stew meat over medium heat.
  • 2. Add the chopped onion and minced garlic, cook until softened.
  • 3. Stir in the diced potatoes, carrots, and celery.
  • 4. Pour in the beef broth and diced tomatoes.
  • 5. Add the dried thyme and rosemary. Season with salt and pepper to taste.
  • 6. Bring to a boil, then reduce heat and simmer for about 2 hours, or until the meat is tender.

Notes:

Great served with crusty bread.
