Ingredients:  

Main Ingredients

  • 1 lb Saltfish soaked overnight and drained
  • 2 Onions chopped
  • 2 Bell Peppers chopped
  • 3 cloves Garlic minced
  • 2 tbsp Tomato Paste
  • 2 cups Water
  • 1 tsp Thyme dried
  • 1 tsp Black Pepper ground
  • 2 Scotch Bonnet Peppers whole
  • 2 tbsp Vegetable Oil

Instructions: 

  • 1. Heat the vegetable oil in a large pot over medium heat.
  • 2. Add the onions, bell peppers, and garlic. Sauté until softened.
  • 3. Stir in the tomato paste and cook for another 2 minutes.
  • 4. Add the soaked and drained saltfish, water, thyme, black pepper, and Scotch bonnet peppers.
  • 5. Bring to a boil, then reduce the heat and simmer for 30 minutes.
  • 6. Remove the Scotch bonnet peppers before serving.

Notes:

Serve hot with rice or bread.
