Ingredients:  

Main Ingredients

  • 1 lb Ground Bison
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 3 cups Beef Broth
  • 2 cups Diced Tomatoes canned
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Dried Thyme
  • 1 tsp Dried Rosemary

Instructions: 

  • 1. In a large pot, cook the ground bison over medium heat until browned. Remove and set aside.
  • 2. In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent.
  • 3. Add the beef broth, diced tomatoes, sliced carrots, and diced potatoes to the pot. Stir well.
  • 4. Return the browned bison to the pot. Add salt, black pepper, dried thyme, and dried rosemary. Stir to combine.
  • 5. Bring the stew to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the vegetables are tender.
  • 6. Serve hot and enjoy!

Notes:

This stew is even better the next day. Store leftovers in the fridge and reheat before serving.
