Instructions:
1. In a large pot, cook the ground bison over medium heat until browned. Remove and set aside.
2. In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent.
3. Add the beef broth, diced tomatoes, sliced carrots, and diced potatoes to the pot. Stir well.
4. Return the browned bison to the pot. Add salt, black pepper, dried thyme, and dried rosemary. Stir to combine.
5. Bring the stew to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the vegetables are tender.
6. Serve hot and enjoy!
Notes:
This stew is even better the next day. Store leftovers in the fridge and reheat before serving.
