Instructions:
1. Heat a large pot over medium heat and add the pork shoulder. Cook until browned.
2. Add the sliced onion, carrots, and potatoes to the pot. Cook for 5 minutes.
3. Pour in the dashi stock, soy sauce, mirin, sugar, and salt. Stir well.
4. Bring to a boil, then reduce heat to low. Cover and simmer for 45 minutes or until vegetables are tender.
5. Serve hot and enjoy!
Notes:
This stew is perfect for a cozy night in. You can add more vegetables if you like.
