Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 lb chicken breast, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 can diced tomatoes (14.5 oz)
  • 1 package gnocchi (16 oz)
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • to taste salt and pepper

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add diced chicken and cook until browned.
  • Add chopped onion and minced garlic, cook until softened.
  • Pour in chicken broth, add carrots, celery, and diced tomatoes. Bring to a boil.
  • Reduce heat and let simmer for 20 minutes.
  • Add gnocchi, dried thyme, and dried basil. Cook for another 10 minutes.
  • Season with salt and pepper to taste. Serve hot.

Notes:

Feel free to add other vegetables like peas or spinach for extra nutrition.
