Instructions:
Heat olive oil in a large pot over medium heat.
Add diced chicken and cook until browned.
Add chopped onion and minced garlic, cook until softened.
Pour in chicken broth, add carrots, celery, and diced tomatoes. Bring to a boil.
Reduce heat and let simmer for 20 minutes.
Add gnocchi, dried thyme, and dried basil. Cook for another 10 minutes.
Season with salt and pepper to taste. Serve hot.
Notes:
Feel free to add other vegetables like peas or spinach for extra nutrition.
