Lamb shoulder, cut into chunks

Beef broth

Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add lamb chunks and brown on all sides.
3. Remove lamb and set aside.
4. In the same pot, add onion and garlic, sauté until softened.
5. Return lamb to the pot, add beef broth, diced tomatoes, rosemary, thyme, salt, and pepper.
6. Bring to a boil, then reduce heat and simmer for 1.5 hours.
7. Add spinach and cook for another 5 minutes.
8. Serve hot.
Notes:
Feel free to add other low-carb vegetables like zucchini or bell peppers.
