Ingredients:  

Main Ingredients

  • 1 kg Lamb shoulder, cut into chunks
  • 2 tbsp Olive oil
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 2 cups Beef broth
  • 1 cup Diced tomatoes
  • 1 tsp Dried rosemary
  • 1 tsp Dried thyme
  • 1 tsp Salt to taste
  • 0.5 tsp Black pepper to taste
  • 2 cups Spinach fresh

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add lamb chunks and brown on all sides.
  • 3. Remove lamb and set aside.
  • 4. In the same pot, add onion and garlic, sauté until softened.
  • 5. Return lamb to the pot, add beef broth, diced tomatoes, rosemary, thyme, salt, and pepper.
  • 6. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  • 7. Add spinach and cook for another 5 minutes.
  • 8. Serve hot.

Notes:

Feel free to add other low-carb vegetables like zucchini or bell peppers.
