Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add chicken thighs and cook until browned. Remove and set aside.
3. In the same pot, add onion, bell pepper, and celery. Cook until softened.
4. Add garlic and cook for another minute.
5. Stir in Cajun seasoning, chicken broth, diced tomatoes, and okra.
6. Return chicken to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes.
7. Season with salt and black pepper to taste. Serve hot.
Notes:
This stew is perfect for a cozy dinner. Serve with rice or crusty bread.
