Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 can diced tomatoes (14 oz)
  • 2 cans chickpeas, drained and rinsed (15 oz each)
  • 4 cups vegetable broth
  • 6 cups fresh spinach
  • to taste salt and pepper

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until softened, about 5 minutes.
  • Stir in the minced garlic, ground cumin, ground coriander, and paprika. Cook for another minute.
  • Add the diced tomatoes, chickpeas, and vegetable broth. Bring to a boil.
  • Reduce the heat and let it simmer for about 20 minutes.
  • Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
  • Season with salt and pepper to taste. Serve hot.
