Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until softened, about 5 minutes.
Stir in the minced garlic, ground cumin, ground coriander, and paprika. Cook for another minute.
Add the diced tomatoes, chickpeas, and vegetable broth. Bring to a boil.
Reduce the heat and let it simmer for about 20 minutes.
Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
Season with salt and pepper to taste. Serve hot.
