Ingredients:  

Main Ingredients

  • 1 lb chicken breast, diced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 packet ranch seasoning mix
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • to taste salt and pepper

Instructions: 

  • 1. Heat a large pot over medium heat and add a bit of oil.
  • 2. Add the diced chicken and cook until browned.
  • 3. Add the onion and garlic, cook until fragrant.
  • 4. Stir in the carrots and potatoes, cook for a few minutes.
  • 5. Pour in the chicken broth and bring to a boil.
  • 6. Reduce heat, cover, and simmer for 20 minutes.
  • 7. Stir in the heavy cream and ranch seasoning mix.
  • 8. Simmer for another 10 minutes, season with salt and pepper to taste.
  • 9. Serve hot and enjoy!

Notes:

This stew is perfect for a cozy night in. Feel free to add more veggies if you like!
