Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onion, garlic, carrot, and celery. Cook until softened, about 5 minutes.
Stir in cumin, coriander, and paprika. Cook for another minute.
Add red lentils, diced tomatoes, and vegetable broth. Bring to a boil.
Reduce heat and simmer for 25-30 minutes, until lentils are tender.
Season with salt and pepper to taste. Serve hot.
Notes:
This stew is great served with crusty bread or over rice.
