Ingredients:  

Main Ingredients

  • 1 cup red lentils rinsed
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 large carrot diced
  • 1 stalk celery diced
  • 1 can diced tomatoes 400 grams
  • 4 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • to taste salt and pepper
  • 2 tbsp olive oil

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion, garlic, carrot, and celery. Cook until softened, about 5 minutes.
  • Stir in cumin, coriander, and paprika. Cook for another minute.
  • Add red lentils, diced tomatoes, and vegetable broth. Bring to a boil.
  • Reduce heat and simmer for 25-30 minutes, until lentils are tender.
  • Season with salt and pepper to taste. Serve hot.

Notes:

This stew is great served with crusty bread or over rice.
