Instructions:
1. Heat the pot over medium-high heat and add the beef stew meat. Cook until browned.
2. Add the onions and garlic, and cook until softened.
3. Stir in the chili powder, cumin, salt, and pepper. Cook for another minute.
4. Add the diced tomatoes and beef broth. Bring to a boil.
5. Reduce heat to low, cover, and simmer for 30 minutes.
6. Add the carrots and potatoes. Simmer for another 30 minutes, or until vegetables are tender.
7. Serve hot and enjoy!
Notes:
This stew is perfect for a cold day. Adjust the spices to your liking.
