Ingredients:  

Main Ingredients

  • 1 lb beef stew meat cut into cubes
  • 1 can chickpeas drained and rinsed
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 4 cups beef broth
  • 2 tbsp olive oil
  • 1 tsp salt to taste
  • 0.5 tsp black pepper to taste

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add the beef and cook until browned on all sides.
  • 3. Add the chopped onion and cook until softened.
  • 4. Stir in the garlic, cumin, coriander, and paprika. Cook for another minute.
  • 5. Pour in the beef broth and bring to a boil.
  • 6. Reduce heat to low, cover, and simmer for 1 hour or until the beef is tender.
  • 7. Add the chickpeas and cook for an additional 15 minutes.
  • 8. Season with salt and pepper to taste before serving.

Notes:

Serve with crusty bread or over rice for a complete meal.
