Ingredients:  

Main Ingredients

  • 2 cups Dried white beans soaked overnight
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 large Carrot chopped
  • 1 large Red bell pepper chopped
  • 1 can Diced tomatoes 14 oz can
  • 4 cups Vegetable broth
  • 1 tsp Paprika smoked
  • 1 tsp Cumin
  • 1 tsp Salt or to taste
  • 1/2 tsp Black pepper freshly ground
  • 2 tbsp Olive oil
  • 1 tbsp Fresh parsley chopped, for garnish

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onion, garlic, carrot, and red bell pepper. Cook until softened, about 5-7 minutes.
  • 3. Stir in the smoked paprika and cumin, and cook for another minute.
  • 4. Add the soaked white beans, diced tomatoes, and vegetable broth. Bring to a boil.
  • 5. Reduce the heat to low and let it simmer for about 45 minutes, or until the beans are tender.
  • 6. Season with salt and black pepper to taste.
  • 7. Garnish with fresh parsley before serving.

Notes:

This stew is even better the next day, as the flavors have more time to meld together.
