Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion, garlic, carrot, and red bell pepper. Cook until softened, about 5-7 minutes.
3. Stir in the smoked paprika and cumin, and cook for another minute.
4. Add the soaked white beans, diced tomatoes, and vegetable broth. Bring to a boil.
5. Reduce the heat to low and let it simmer for about 45 minutes, or until the beans are tender.
6. Season with salt and black pepper to taste.
7. Garnish with fresh parsley before serving.
Notes:
This stew is even better the next day, as the flavors have more time to meld together.
