Ingredients:  

Main Ingredients

  • 2 cups white beans, cooked
  • 1 cup mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 tsp thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions: 

  • Heat olive oil in a pot over medium heat.
  • Add onions and garlic, sauté until translucent.
  • Add mushrooms, cook until they release their moisture.
  • Stir in white beans, vegetable broth, and thyme.
  • Bring to a boil, then simmer for 20 minutes.
  • Season with salt and pepper to taste.
