Ingredients:  

Main Ingredients

  • 1 tbsp Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Carrot, sliced
  • 2 Potatoes, diced
  • 1 cup Green Beans, chopped
  • 1 cup Tomatoes, chopped
  • 4 cups Vegetable Broth
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Turmeric
  • 1 tsp Cumin

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic, and sauté until they are soft and fragrant.
  • Add the sliced carrot, diced potatoes, and chopped green beans. Cook for about 5 minutes.
  • Stir in the chopped tomatoes and cook for another 5 minutes.
  • Pour in the vegetable broth and bring the mixture to a boil.
  • Reduce the heat to low and add the salt, black pepper, turmeric, and cumin. Let it simmer for about 30 minutes, or until the vegetables are tender.
  • Serve hot and enjoy your Sherpa Stew!

Notes:

This stew is perfect for cold days and can be enjoyed with a side of bread or rice.
