Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and minced garlic, and sauté until they are soft and fragrant.
Add the sliced carrot, diced potatoes, and chopped green beans. Cook for about 5 minutes.
Stir in the chopped tomatoes and cook for another 5 minutes.
Pour in the vegetable broth and bring the mixture to a boil.
Reduce the heat to low and add the salt, black pepper, turmeric, and cumin. Let it simmer for about 30 minutes, or until the vegetables are tender.
Serve hot and enjoy your Sherpa Stew!
Notes:
This stew is perfect for cold days and can be enjoyed with a side of bread or rice.
