Ingredients:  

Main Ingredients

  • 4 pork chops (chuletas)
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tomatoes, chopped
  • 2 potatoes, peeled and cubed
  • 1 cup chicken broth
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add pork chops and brown on both sides. Remove and set aside.
  • In the same pot, add onion, garlic, and bell pepper. Sauté until softened.
  • Add tomatoes and cook for another 5 minutes.
  • Return pork chops to the pot. Add potatoes, chicken broth, paprika, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 30 minutes, or until pork and potatoes are tender.
  • Garnish with fresh parsley before serving.
