garlic, minced

bell pepper, chopped

tomatoes, chopped

potatoes, peeled and cubed

chicken broth

teaspoon
paprika
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Heat olive oil in a large pot over medium heat.
Add pork chops and brown on both sides. Remove and set aside.
In the same pot, add onion, garlic, and bell pepper. Sauté until softened.
Add tomatoes and cook for another 5 minutes.
Return pork chops to the pot. Add potatoes, chicken broth, paprika, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 30 minutes, or until pork and potatoes are tender.
Garnish with fresh parsley before serving.
