Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onions and cook until translucent.
Add minced garlic and cook for another minute.
Add sliced okra and diced tomatoes to the pot.
Season with salt and black pepper to taste.
Cover and simmer for 20-25 minutes, stirring occasionally, until okra is tender.
Serve hot.

This stew pairs well with rice or cornbread.
