Ingredients:  

Main Ingredients

  • 1 lb Okra sliced
  • 2 cups Tomatoes diced
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tbsp Olive Oil
  • 1 tsp Salt to taste
  • 0.5 tsp Black Pepper to taste

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onions and cook until translucent.
  • Add minced garlic and cook for another minute.
  • Add sliced okra and diced tomatoes to the pot.
  • Season with salt and black pepper to taste.
  • Cover and simmer for 20-25 minutes, stirring occasionally, until okra is tender.
  • Serve hot.

Notes:

This stew pairs well with rice or cornbread.
