Ingredients:  

Main Ingredients

  • 2 lbs Pork shoulder cut into cubes
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 2 tbsp Vegetable oil
  • 2 cups Chicken broth
  • 1 can Diced tomatoes
  • 2 tsp Thyme dried
  • 1 tsp Allspice ground
  • 1 tsp Salt
  • 1 tsp Black pepper ground
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced

Instructions: 

  • Heat the oil in a large pot over medium heat. Add the pork and cook until browned on all sides.
  • Add the onion and garlic to the pot and cook until softened.
  • Stir in the chicken broth, diced tomatoes, thyme, allspice, salt, and pepper. Bring to a boil.
  • Reduce the heat to low, cover, and simmer for 1 hour.
  • Add the carrots and potatoes to the pot. Continue to simmer for another 30 minutes, or until the vegetables are tender.
  • Serve hot and enjoy!

Notes:

This stew is even better the next day, so consider making it ahead of time.
