Instructions:
Heat the oil in a large pot over medium heat. Add the pork and cook until browned on all sides.
Add the onion and garlic to the pot and cook until softened.
Stir in the chicken broth, diced tomatoes, thyme, allspice, salt, and pepper. Bring to a boil.
Reduce the heat to low, cover, and simmer for 1 hour.
Add the carrots and potatoes to the pot. Continue to simmer for another 30 minutes, or until the vegetables are tender.
Serve hot and enjoy!
Notes:
This stew is even better the next day, so consider making it ahead of time.
