Instructions:
Heat the palm oil in a pot over medium heat.
Add the chopped onions and garlic, sauté until fragrant.
Add the chopped red bell peppers and cook for another 5 minutes.
Pour in the stock and bring to a simmer.
Add the chopped spinach, salt, and black pepper. Stir well.
Cover and cook for 20-25 minutes, stirring occasionally.
Serve hot with rice or your preferred side.

This stew is perfect for a hearty meal. Adjust spices to your preference.
