Ingredients:  

Main Ingredients

  • 2 lbs Elk meat, cubed
  • 4 cups Beef broth
  • 2 Carrots, chopped
  • 2 Potatoes, cubed
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 2 tbsp Olive oil
  • 1 tsp Thyme
  • 1 tsp Rosemary
  • to taste Salt and pepper

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add elk meat and brown on all sides.
  • 3. Add onion and garlic, cook until softened.
  • 4. Pour in beef broth, add carrots, potatoes, thyme, and rosemary.
  • 5. Bring to a boil, then reduce heat and simmer for 2 hours.
  • 6. Season with salt and pepper to taste before serving.

Notes:

For a thicker stew, you can add a slurry of flour and water during the last 30 minutes of cooking.
