Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add elk meat and brown on all sides.
3. Add onion and garlic, cook until softened.
4. Pour in beef broth, add carrots, potatoes, thyme, and rosemary.
5. Bring to a boil, then reduce heat and simmer for 2 hours.
6. Season with salt and pepper to taste before serving.
Notes:
For a thicker stew, you can add a slurry of flour and water during the last 30 minutes of cooking.
