Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion, garlic, bell pepper, celery, and carrots. Cook until vegetables are tender.
3. Stir in diced tomatoes, chicken broth, salt, pepper, paprika, and thyme. Bring to a boil.
4. Reduce heat and simmer for 20 minutes.
5. Add shrimp and cook until shrimp is pink and cooked through, about 5 minutes.
6. Serve hot and enjoy!
