Ingredients:  

Main Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 2 cups Chicken broth
  • 1 cup Diced tomatoes
  • 1 cup Chopped onion
  • 2 cloves Garlic, minced
  • 1 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tsp Paprika
  • 1 tsp Dried thyme
  • 1 cup Chopped bell pepper
  • 1 cup Chopped celery
  • 1 cup Chopped carrots

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add chopped onion, garlic, bell pepper, celery, and carrots. Cook until vegetables are tender.
  • 3. Stir in diced tomatoes, chicken broth, salt, pepper, paprika, and thyme. Bring to a boil.
  • 4. Reduce heat and simmer for 20 minutes.
  • 5. Add shrimp and cook until shrimp is pink and cooked through, about 5 minutes.
  • 6. Serve hot and enjoy!

Feel free to add your favorite vegetables or spices to make this stew your own.
