Ingredients:  

Main Ingredients

  • 1 lb Ground Beef
  • 1 cup Breadcrumbs
  • 1 Egg
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 2 cups Beef Broth
  • 1 cup Carrots, diced
  • 1 cup Potatoes, diced
  • 1 cup Peas

Instructions: 

  • In a mixing bowl, combine ground beef, breadcrumbs, egg, salt, and black pepper. Mix well and form into meatballs.
  • In a large pot, heat some oil over medium heat and brown the meatballs on all sides. Remove and set aside.
  • In the same pot, add beef broth, carrots, potatoes, and peas. Bring to a boil.
  • Return the meatballs to the pot, reduce heat, and simmer for 30 minutes until vegetables are tender and meatballs are cooked through.
  • Serve hot and enjoy!

Notes:

Feel free to add other vegetables like corn or green beans.
