Ingredients:  

Main Ingredients

  • 2 lbs Beef Stew Meat
  • 1 cup Sofrito homemade or store-bought
  • 2 cups Beef Broth
  • 1 cup Diced Tomatoes canned
  • 2 pcs Potatoes peeled and cubed
  • 1 pc Carrot sliced
  • 1 pc Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Salt to taste
  • 0.5 tsp Black Pepper to taste

Instructions: 

  • 1. In a large pot, heat some oil over medium heat. Add the beef stew meat and brown on all sides.
  • 2. Add the chopped onion, minced garlic, and sofrito to the pot. Cook for a few minutes until the onions are translucent.
  • 3. Pour in the beef broth and diced tomatoes. Bring to a boil, then reduce the heat to low and simmer for 1 hour.
  • 4. Add the potatoes, carrot, salt, and black pepper. Continue to simmer for another hour, or until the meat and vegetables are tender.
  • 5. Taste and adjust seasoning if necessary. Serve hot.

Notes:

This stew is even better the next day. Store leftovers in the fridge and reheat gently.
