Instructions:
1. In a large pot, heat some oil over medium heat. Add the beef stew meat and brown on all sides.
2. Add the chopped onion, minced garlic, and sofrito to the pot. Cook for a few minutes until the onions are translucent.
3. Pour in the beef broth and diced tomatoes. Bring to a boil, then reduce the heat to low and simmer for 1 hour.
4. Add the potatoes, carrot, salt, and black pepper. Continue to simmer for another hour, or until the meat and vegetables are tender.
5. Taste and adjust seasoning if necessary. Serve hot.
Notes:
This stew is even better the next day. Store leftovers in the fridge and reheat gently.
