Ingredients:  

Stew

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups carrots, sliced
  • 2 cups celery, sliced
  • 1 cup frozen peas
  • 4 cups vegetable broth
  • 2 cups vegan chicken, shredded
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • to taste salt and pepper

Dumplings

  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsweetened almond milk
  • 2 tbsp olive oil

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until softened.
  • Add carrots and celery, cook for about 5 minutes.
  • Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  • Add vegan chicken, peas, thyme, rosemary, salt, and pepper. Simmer for another 10 minutes.
  • In a mixing bowl, combine flour, baking powder, and salt for the dumplings. Stir in almond milk and olive oil until just combined.
  • Drop spoonfuls of the dumpling batter into the simmering stew. Cover and cook for 15 minutes, or until dumplings are cooked through.
  • Serve hot and enjoy!

Notes:

Feel free to add more veggies or adjust the seasoning to your taste.
