vegan chicken, shredded

Dumplings

all-purpose flour

baking powder

unsweetened almond milk

olive oil
Instructions:
Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until softened.
Add carrots and celery, cook for about 5 minutes.
Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
Add vegan chicken, peas, thyme, rosemary, salt, and pepper. Simmer for another 10 minutes.
In a mixing bowl, combine flour, baking powder, and salt for the dumplings. Stir in almond milk and olive oil until just combined.
Drop spoonfuls of the dumpling batter into the simmering stew. Cover and cook for 15 minutes, or until dumplings are cooked through.
Serve hot and enjoy!
Notes:
Feel free to add more veggies or adjust the seasoning to your taste.
