Ingredients:  

Main Ingredients

  • 1 kg Beef Stew Meat cut into chunks
  • 2 tbsp Olive Oil
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 2 tbsp Harissa Paste
  • 400 g Canned Tomatoes diced
  • 2 cups Beef Broth
  • 2 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 2 Carrots sliced
  • 2 Potatoes cubed

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add beef chunks and brown on all sides. Remove and set aside.
  • 3. In the same pot, add chopped onion and garlic. Sauté until softened.
  • 4. Stir in harissa paste, cumin, and coriander. Cook for another minute.
  • 5. Add diced tomatoes and beef broth. Bring to a boil.
  • 6. Return beef to the pot. Add carrots and potatoes.
  • 7. Reduce heat to low, cover, and simmer for 2 hours or until beef is tender.
  • 8. Season with salt and pepper to taste. Serve hot.

Notes:

This stew is even better the next day. Store in the fridge and reheat gently.
