Harissa Paste

Canned Tomatoes

Beef Broth

Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add beef chunks and brown on all sides. Remove and set aside.
3. In the same pot, add chopped onion and garlic. Sauté until softened.
4. Stir in harissa paste, cumin, and coriander. Cook for another minute.
5. Add diced tomatoes and beef broth. Bring to a boil.
6. Return beef to the pot. Add carrots and potatoes.
7. Reduce heat to low, cover, and simmer for 2 hours or until beef is tender.
8. Season with salt and pepper to taste. Serve hot.
Notes:
This stew is even better the next day. Store in the fridge and reheat gently.
