Instructions:
1. Heat olive oil in a large pot over medium heat. Add the beef stew meat and cook until browned on all sides.
2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
3. Stir in the sliced mushrooms and cook for another 5 minutes.
4. Add the beef broth, tomato paste, thyme, and rosemary. Stir well to combine.
5. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 45 minutes, or until the meat is tender.
6. Season with salt and pepper to taste. Serve hot.
Notes:
Feel free to add other vegetables like carrots or potatoes for extra heartiness.
