Ingredients:  

Main Ingredients

  • 1 lb Pork shoulder cut into cubes
  • 1 lb Tomatillos husked and chopped
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 2 cups Chicken broth
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1 tbsp Olive oil
  • 1 cup Cilantro chopped, for garnish

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add pork and cook until browned.
  • Add onion and garlic, cook until softened.
  • Stir in tomatillos, chicken broth, cumin, and salt. Bring to a boil.
  • Reduce heat and simmer for 45 minutes, until pork is tender.
  • Garnish with cilantro before serving.

Notes:

Serve with warm tortillas or rice.
