Instructions:
Heat olive oil in a large pot over medium heat. Add pork and cook until browned.
Add onion and garlic, cook until softened.
Stir in tomatillos, chicken broth, cumin, and salt. Bring to a boil.
Reduce heat and simmer for 45 minutes, until pork is tender.
Garnish with cilantro before serving.
Notes:
Serve with warm tortillas or rice.
