Instructions:
Heat olive oil in a large pot over medium heat.
Add chicken pieces and cook until browned.
Add minced garlic and cook for another minute.
Pour in chicken broth and bring to a simmer.
Add heavy cream, grated parmesan, salt, pepper, and thyme. Stir well.
Simmer for 20-25 minutes until the chicken is cooked through.
Stir in baby spinach and cook until wilted.
Serve hot and enjoy!
Notes:
Feel free to add more vegetables like carrots or potatoes for extra heartiness.
