African Lamb Stew Recipe

Ingredients:  

Main Ingredients

  • 1 kg Lamb shoulder, cut into chunks
  • 2 tbsp Olive oil
  • 1 Large onion, chopped
  • 3 cloves Garlic, minced
  • 2 tsp Ground cumin
  • 1 tsp Ground coriander
  • 1 tsp Paprika
  • 400 g Canned tomatoes
  • 500 ml Beef stock
  • 2 Carrots, sliced
  • 2 Potatoes, cubed
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat. Add the lamb and brown on all sides.
  • 2. Remove the lamb and set aside. In the same pot, add the onion and garlic, and sauté until softened.
  • 3. Stir in the cumin, coriander, and paprika, and cook for another minute.
  • 4. Return the lamb to the pot. Add the canned tomatoes, beef stock, carrots, and potatoes.
  • 5. Bring to a boil, then reduce the heat and simmer for 1 hour, or until the lamb is tender.
  • 6. Season with salt and black pepper to taste. Serve hot.

Notes:

This stew is even better the next day, so consider making it ahead of time.
