Lamb shoulder, cut into chunks

Olive oil

Large onion, chopped

Garlic, minced

Ground cumin

Ground coriander

Canned tomatoes

Beef stock

Carrots, sliced

Potatoes, cubed

to taste

to taste
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the lamb and brown on all sides.
2. Remove the lamb and set aside. In the same pot, add the onion and garlic, and sauté until softened.
3. Stir in the cumin, coriander, and paprika, and cook for another minute.
4. Return the lamb to the pot. Add the canned tomatoes, beef stock, carrots, and potatoes.
5. Bring to a boil, then reduce the heat and simmer for 1 hour, or until the lamb is tender.
6. Season with salt and black pepper to taste. Serve hot.
Notes:
This stew is even better the next day, so consider making it ahead of time.
