Ingredients:  

Main Ingredients

  • 2 tbsp Olive Oil
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 2 medium Carrots, sliced
  • 2 stalks Celery, sliced
  • 2 cups Diced Tomatoes canned
  • 4 cups Vegetable Broth
  • 1 cup Green Beans, chopped
  • 1 cup Corn Kernels
  • 1 tsp Dried Thyme
  • 1 tsp Dried Basil
  • 1 tsp Salt to taste
  • 0.5 tsp Black Pepper to taste

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until translucent.
  • Add minced garlic and cook for another minute.
  • Add sliced carrots and celery, cook for 5 minutes.
  • Stir in diced tomatoes and vegetable broth, bring to a boil.
  • Add green beans, corn, thyme, basil, salt, and pepper.
  • Reduce heat and simmer for 30 minutes, stirring occasionally.
  • Serve hot and enjoy!

Notes:

Feel free to add other vegetables you like.
