Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent.
Add minced garlic and cook for another minute.
Add sliced carrots and celery, cook for 5 minutes.
Stir in diced tomatoes and vegetable broth, bring to a boil.
Add green beans, corn, thyme, basil, salt, and pepper.
Reduce heat and simmer for 30 minutes, stirring occasionally.
Serve hot and enjoy!
Notes:
Feel free to add other vegetables you like.
