beef broth

red wine

Salt and pepper to taste
Instructions:
Heat olive oil in a large pot over medium heat. Brown the lamb cubes on all sides.
Add the chopped onion and minced garlic. Cook until the onion is translucent.
Add the carrots and potatoes. Stir well.
Pour in the beef broth, red wine, and diced tomatoes. Stir to combine.
Add thyme, rosemary, salt, and pepper. Bring to a boil.
Reduce heat to low, cover, and simmer for about 2 hours, or until the lamb is tender.
Notes:
Serve hot with crusty bread or rice.
