Ingredients:  

Main Ingredients

  • 2 lbs lamb shoulder, cubed
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 1 cup beef broth
  • 1 cup red wine
  • 1 can diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions: 

  • Heat olive oil in a large pot over medium heat. Brown the lamb cubes on all sides.
  • Add the chopped onion and minced garlic. Cook until the onion is translucent.
  • Add the carrots and potatoes. Stir well.
  • Pour in the beef broth, red wine, and diced tomatoes. Stir to combine.
  • Add thyme, rosemary, salt, and pepper. Bring to a boil.
  • Reduce heat to low, cover, and simmer for about 2 hours, or until the lamb is tender.

Notes:

Serve hot with crusty bread or rice.
