Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 500 g mushrooms, sliced
  • 2 cups vegetable broth
  • 1 cup diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • to taste salt and pepper

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the diced onion and cook until translucent, about 5 minutes.
  • 3. Stir in the minced garlic and cook for another minute.
  • 4. Add the sliced mushrooms and cook until they release their moisture and start to brown, about 10 minutes.
  • 5. Pour in the vegetable broth and diced tomatoes. Stir in the thyme and rosemary.
  • 6. Bring to a boil, then reduce the heat and let it simmer for 30 minutes.
  • 7. Season with salt and pepper to taste. Serve hot.

Notes:

Feel free to add other vegetables like carrots or potatoes for a heartier stew.
