Ingredients:

mushrooms, sliced

vegetable broth

dried thyme

Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the diced onion and cook until translucent, about 5 minutes.
3. Stir in the minced garlic and cook for another minute.
4. Add the sliced mushrooms and cook until they release their moisture and start to brown, about 10 minutes.
5. Pour in the vegetable broth and diced tomatoes. Stir in the thyme and rosemary.
6. Bring to a boil, then reduce the heat and let it simmer for 30 minutes.
7. Season with salt and pepper to taste. Serve hot.
Notes:
Feel free to add other vegetables like carrots or potatoes for a heartier stew.
