  • 1.5 lbs red potatoes washed and quartered
  • 1 cup chicken or vegetable broth
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions: 

  • Place the quartered red potatoes in the Instant Pot.
  • Add the broth, minced garlic, olive oil, salt, pepper, and dried thyme.
  • Close the lid, set the valve to sealing, and cook on high pressure for 5 minutes.
  • Once done, quick release the pressure and carefully open the lid.
  • Serve the red potatoes hot as a side dish.

Notes:

For a richer flavor, you can add a tablespoon of butter before serving.
