Ingredients:  

Main Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • to taste Salt and pepper
  • 2 tbsp olive oil

Instructions: 

  • Season chicken breasts with salt and pepper.
  • Set Instant Pot to sauté mode and heat olive oil.
  • Sear chicken breasts until browned, then remove and set aside.
  • Add onions and garlic to the pot, sauté until softened.
  • Pour in chicken broth and deglaze the pot.
  • Add thyme, then return chicken to the pot.
  • Close the lid, set to high pressure for 10 minutes.
  • Quick release pressure, remove chicken, and set aside.
  • Set Instant Pot to sauté mode, add heavy cream, and simmer until thickened.
  • Return chicken to the pot, coat with sauce, and serve.
