Instructions:
Rinse the lentils and rice separately under cold water.
Set the Instant Pot to sauté mode and add a drizzle of olive oil.
Sauté the onions until caramelized, then remove half and set aside for topping.
Add the lentils, rice, spices, and vegetable broth to the Instant Pot.
Close the lid, set the valve to sealing, and cook on high pressure for 10 minutes.
Allow for a natural pressure release for 10 minutes, then manually release any remaining pressure.
Fluff the mujadara with a fork and serve topped with the reserved caramelized onions.
Notes:
This dish is traditionally served with a side of yogurt or a simple salad. Feel free to adjust the spices to your taste.
