Ingredients:  

Main Ingredients

  • 1 cup green or brown lentils
  • 1 cup basmati rice
  • 2 large onions thinly sliced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 0.5 teaspoon cinnamon
  • to taste Salt and pepper
  • as needed Olive oil

Instructions: 

  • Rinse the lentils and rice separately under cold water.
  • Set the Instant Pot to sauté mode and add a drizzle of olive oil.
  • Sauté the onions until caramelized, then remove half and set aside for topping.
  • Add the lentils, rice, spices, and vegetable broth to the Instant Pot.
  • Close the lid, set the valve to sealing, and cook on high pressure for 10 minutes.
  • Allow for a natural pressure release for 10 minutes, then manually release any remaining pressure.
  • Fluff the mujadara with a fork and serve topped with the reserved caramelized onions.

Notes:

This dish is traditionally served with a side of yogurt or a simple salad. Feel free to adjust the spices to your taste.
