Ingredients:  

  • 1 lb protein (chicken, beef, tofu)
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons oil
  • Salt and pepper to taste

Instructions: 

  • Set your Instant Pot to sauté mode and heat the oil.
  • Add the protein and cook until browned.
  • Add the garlic and ginger, cook for another minute.
  • Pour in the soy sauce and mix well.
  • Add the mixed vegetables and stir to combine.
  • Close the Instant Pot lid, set to manual high pressure for 0 minutes.
  • Quick release the pressure and open the lid.
  • Season with salt and pepper to taste.
  • Serve hot over rice or noodles.
