Instructions:
Place chicken breasts, chicken broth, mixed vegetables, onion, garlic, thyme, salt, and pepper in the Instant Pot.
Close the lid, set the valve to sealing, and cook on high pressure for 10 minutes.
Quick release the pressure, open the lid, and shred the chicken with two forks.
In a bowl, mix flour, baking powder, and salt. Add milk and melted butter to form a dough.
Drop spoonfuls of the dough into the Instant Pot.
Close the lid and cook on high pressure for 10 minutes.
Quick release the pressure and stir the dumplings into the chicken mixture.
Serve hot and enjoy!
Notes:
For a richer flavor, you can use chicken thighs instead of chicken breasts. Feel free to add other vegetables like green beans or potatoes.
