Ingredients:  

  • 1 lb boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup milk
  • 2 tbsp butter

Instructions: 

  • Place chicken breasts, chicken broth, mixed vegetables, onion, garlic, thyme, salt, and pepper in the Instant Pot.
  • Close the lid, set the valve to sealing, and cook on high pressure for 10 minutes.
  • Quick release the pressure, open the lid, and shred the chicken with two forks.
  • In a bowl, mix flour, baking powder, and salt. Add milk and melted butter to form a dough.
  • Drop spoonfuls of the dough into the Instant Pot.
  • Close the lid and cook on high pressure for 10 minutes.
  • Quick release the pressure and stir the dumplings into the chicken mixture.
  • Serve hot and enjoy!

Notes:

For a richer flavor, you can use chicken thighs instead of chicken breasts. Feel free to add other vegetables like green beans or potatoes.
