  • 1 pound chicken breasts, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • to taste Salt and pepper
  • 2 tablespoons olive oil

Instructions: 

  • Set the Instant Pot to sauté mode and heat olive oil.
  • Add chicken and cook until browned.
  • Add onions and garlic, sauté until fragrant.
  • Stir in wild rice, chicken broth, thyme, salt, and pepper.
  • Close the lid, set to high pressure for 15 minutes.
  • Natural release for 10 minutes, then quick release.
  • Serve hot and enjoy!
