Ingredients:  

Main Ingredients

  • 1 cup dried chickpeas
  • 4 cups water
  • 1/4 cup tahini
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt, to taste
  • Olive oil, for drizzling
  • Paprika, for garnish
  • Chopped parsley, for garnish

Instructions: 

  • Rinse the chickpeas and add them to the Instant Pot with 4 cups of water.
  • Cook on high pressure for 45 minutes, then allow for a natural pressure release.
  • Drain the chickpeas, reserving some of the cooking liquid.
  • In a food processor, combine the chickpeas, tahini, lemon juice, garlic, cumin, and salt. Blend until smooth, adding reserved cooking liquid as needed for desired consistency.
  • Taste and adjust seasoning if necessary.
  • Serve drizzled with olive oil, sprinkled with paprika, and garnished with chopped parsley.

Notes:

For a creamier texture, you can peel the chickpeas after cooking.
