This Instant Pot Hummus recipe is simple and savory, perfect for a healthy snack or appetizer. Made with dried chickpeas, tahini, lemon juice, garlic, and spices, it's a delicious and nutritious dish.
Rinse the chickpeas and add them to the Instant Pot with 4 cups of water.
Cook on high pressure for 45 minutes, then allow for a natural pressure release.
Drain the chickpeas, reserving some of the cooking liquid.
In a food processor, combine the chickpeas, tahini, lemon juice, garlic, cumin, and salt. Blend until smooth, adding reserved cooking liquid as needed for desired consistency.
Taste and adjust seasoning if necessary.
Serve drizzled with olive oil, sprinkled with paprika, and garnished with chopped parsley.
Notes:
For a creamier texture, you can peel the chickpeas after cooking.
