Instructions:
Rinse the white beans under cold water and drain.
In the Instant Pot, combine the white beans, water, salt, bay leaf, garlic, and onion.
Close the lid and set the Instant Pot to high pressure for 25 minutes.
Once the cooking time is up, allow for a natural pressure release for 10 minutes before quick releasing the remaining pressure.
Carefully open the lid and stir in the olive oil, thyme, salt, and pepper.
Serve the white beans hot as a side dish or over rice.
