Ingredients:  

Main Ingredients

  • 1 pound dried black-eyed peas
  • 6 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1 bay leaf

Instructions: 

  • Rinse the black-eyed peas under cold water and drain.
  • Place the peas in the Instant Pot along with water, onion, garlic, salt, black pepper, smoked paprika, cayenne pepper, and bay leaf.
  • Close the lid and set the Instant Pot to high pressure for 25 minutes.
  • Once the cooking time is up, allow for a natural pressure release for 10 minutes before doing a quick release.
  • Stir the peas and adjust seasoning if needed before serving.

Notes:
