Instructions:
Turn on the Instant Pot and select the sauté function. Add the pork belly and cook until browned.
Add the onion, garlic, and ginger. Sauté for another 2 minutes.
Pour in the soy sauce, rice vinegar, brown sugar, and water. Stir to combine.
Close the Instant Pot lid and set to high pressure for 30 minutes.
Once done, allow for a natural pressure release for 10 minutes before quick releasing the remaining pressure.
Serve the braised pork belly over rice, garnished with green onions.
