Ingredients:  

Main Ingredients

  • 1 pound dried pinto beans
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 jalapeño, diced
  • 1 can diced tomatoes
  • 1 bottle beer
  • 4 cups chicken or vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions: 

  • Rinse the pinto beans and pick out any debris.
  • In the Instant Pot, combine the beans, onion, garlic, jalapeño, diced tomatoes, beer, broth, cumin, chili powder, salt, and pepper.
  • Close the lid and set the Instant Pot to high pressure for 30 minutes.
  • Once the cooking time is up, allow for a natural pressure release for 15 minutes before manually releasing any remaining pressure.
  • Taste and adjust seasoning if needed.
  • Serve the borracho beans hot, garnished with fresh cilantro.

Notes:

These borracho beans are perfect as a side dish for tacos, burritos, or any Mexican-inspired meal. You can also enjoy them as a main dish with some rice or cornbread.
