  • 2 cups dried pinto beans
  • 6 cups water
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 bay leaf

Instructions: 

  • Rinse the pinto beans under cold water and pick out any debris.
  • In the Instant Pot, combine the rinsed beans, water, onion, garlic, salt, cumin, chili powder, and bay leaf.
  • Close the lid, set the valve to sealing, and cook on high pressure for 45 minutes.
  • Once done, allow for a natural pressure release for 10 minutes before quick releasing any remaining pressure.
  • Open the lid carefully, remove the bay leaf, and stir the beans before serving.

Notes:

These beans can be served as a side dish or as a main course with rice or tortillas. Adjust the seasoning to taste if needed.
