Ingredients:  

Main Ingredients

  • 1 lb cooked turkey, shredded
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 clove garlic, minced
  • 6 cups chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup uncooked pasta

Instructions: 

  • Set the Instant Pot to sauté mode and add some oil. Sauté the onion, carrots, celery, and garlic until softened.
  • Add the shredded turkey, chicken broth, dried thyme, salt, and pepper to the Instant Pot. Close the lid and set to high pressure for 10 minutes.
  • Once the cooking time is up, do a quick release of the pressure. Add the uncooked pasta to the pot and set to sauté mode. Cook until the pasta is tender.
  • Adjust seasoning if needed and serve hot.

Notes:

This recipe is perfect for using up leftover turkey from holidays. Feel free to add other vegetables or spices to suit your taste.
