Instructions:
Season short ribs with salt and pepper.
Turn on the Instant Pot to sauté mode and heat olive oil.
Brown short ribs on all sides, then remove and set aside.
Add garlic, onion, carrots, and celery to the pot, sauté until softened.
Pour in beef broth and red wine, deglaze the pot.
Return short ribs to the pot, add thyme and bay leaf.
Close the lid, set to high pressure for 45 minutes.
Natural release for 10 minutes, then quick release.
Serve short ribs with the vegetables and sauce.
Notes:
For best results, use high-quality beef short ribs and a good red wine.
