Ingredients:  

Main Ingredients

  • 2 pounds beef short ribs
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup beef broth
  • 1/2 cup red wine
  • 2 cloves garlic minced
  • 1 onion chopped
  • 2 carrots chopped
  • 2 stalks celery chopped
  • 2 sprigs fresh thyme
  • 1 bay leaf

Instructions: 

  • Season short ribs with salt and pepper.
  • Turn on the Instant Pot to sauté mode and heat olive oil.
  • Brown short ribs on all sides, then remove and set aside.
  • Add garlic, onion, carrots, and celery to the pot, sauté until softened.
  • Pour in beef broth and red wine, deglaze the pot.
  • Return short ribs to the pot, add thyme and bay leaf.
  • Close the lid, set to high pressure for 45 minutes.
  • Natural release for 10 minutes, then quick release.
  • Serve short ribs with the vegetables and sauce.

Notes:

For best results, use high-quality beef short ribs and a good red wine.
